Caribbean Potato Soup

I got this recipe from a friend who got it from the International Pantry Cookbook. I have tweeked it just a tad. It has been a favorite these last two months. Enjoy!

Caribbean Potato Soup

2 TBLS. olive oil
1 onion chopped
1 tsp jerk seasoning
2 cloves of garlic, pressed or minced
1 1/2 pounds of potatoes, cubed
1 1/2 pounds yams or sweet potatoes, peeled and cubed
6 cups water
1 1/2 TBLS of this vegetable broth powder (I love this powder. It tastes great and it is very easy to make and it makes a lot. You could also just do 6 cups of vegetable broth, just make sure it doesn't have MSG.)
2 cups chopped spinach
1 cup coconut milk

Saute the onion with the jerk seasoning and garlic. After a few minutes, stir in the stock and bring to a boil with the cubed potatoes and yams added in. Lower heat and simmer until potatoes and yams are tender. Puree half the soup in batches. Return to pot and stir in your spinach. Cook for one minute. Stir in the coconut milk and serve.
