Grilled Ratatouille

So, I assume you have seen the movie Ratatouille. It is a cute show. My kids like it!

About a year and a half ago (when I was just starting on my food revolution) I had this fabulous idea to make Ratatouille. It is actually quite healthy. I thought that my kids would just LOVE it because of the movie. I found a recipe online that had pretty good reviews. I took A LONG time to make it, but that was ok with me because I just knew it was going to be WONDERFUL! Well, long story short, it was NOT wonderful. It was horrible. I think I must have done something wrong! Anyway, that experience really turned our family off to Ratatouille for a while. Until... I found this recipe! Grilled Ratatouille! The picture looked SO good that I decided to give it one more try! This is a recipe from The Pampered Chef Casual Cooking cookbook. It is a great recipe, and I didn't even have to Healthify it!

Grilled Ratatouille

Dressing: 2 Tble balsamic vinegar
2 garlic cloves, pressed
2 tsp dried oregano leaves
1/2 tsp sea salt

Mix dressing together and set aside.

Veggies: 5 roma tomatoes, cut in half lengthwise
1 medium eggplant, cut into 1/2 inch slices
1 large sweet onion, cut into quarters
1 large green bell pepper, cut into quarters
1 medium zucchini, cut into 1/2 inch slices
1/4 cup olive oil

Cut veggies and brush with olive oil. Prepare grill for cooking over medium heat. Place veggies on grill and grill for 6-8 minutes. When done, cut into bit sized pieces and drizzle with dressing. Stir gently. Place over whole wheat penne pasta or brown rice.

My whole family liked this recipe. The eggplant was especially good! I think I might double it next time I make it. Sorry I don't have a picture. My camera broke.
