So, for my oldest sons birthday party I made ginger bars for his birthday cake. They are really good. I hope you enjoy!
Ginger Bars
1 cup coconut oil
1 cup sucanat
2 eggs or
2 Tbls ground flax seed mixed with 4 Tbls water and left to sit for a while so that it can gel.
1 cup applesauce
1/2 cup molasses
2 1/2 cups whole wheat flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ginger
1/2 tsp cloves
1/2 tsp sea salt
Mix the coconut oil, sucanat, eggs, applesauce and molasses together. Add the dry ingredients. Mix well. Pour into a oiled bar pan. Bake at 350 degrees for 20 minutes or until toothpick comes out clean.
