Artichoke and Pesto Pizza
This is a picture before it was baked. I forgot to take a picture after, because we were so excited to eat it! This is one of our favorite dinners. It is easy and very tasty. It does have cheese on top, but it is very little. Our family does eat a little dairy. We eat homemade yogurt occasionally and we eat cheese about twice a month. This is one of those times. We tried it without cheese and decided that this is one recipe we will splurge on.
Artichoke and Pesto Pizza
4-6 Whole wheat pita bread, or flat bread, depending on how many you want to make
1/2 cup pesto sauce, recipe below
1 large ripe tomato, chopped
1/2 bell pepper, chopped
1 can black olives, chopped
1/2 small red onion, chopped
1 can artichokes, drained and chopped
8 oz shredded mozzarella or Parmesan cheese
Preheat oven to 450 degrees. Place the flat bread on cookie sheet. Spread pesto sauce evenly over bread. Add toppings, using cheese last. Bake 8-10 min.
Pesto Sauce
2 cups fresh basil
3 garlic cloves
3 Tbls pine nuts
1/2 cup olive oil
1/2 cup Parmesan cheese, optional
Place all ingredients in food processor and process.
This recipe makes more than what you need for the pizza. I usually freeze the rest in ice cube trays, then transfer them to a freezer bag when frozen. That way I can use it for our next pizza, or I can put it over some whole wheat pasta for a quick meal.
